½ C butter or margarine
1-½ C sugar
3 eggs
1 tsp vanilla
2 C all-purpose flour
½ C unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
1 8-ounce can sauerkraut rinsed and drained
1 C water
Preheat oven to 350 degrees. Rinse and thoroughly drain sauerkraut and finely snip. Beat butter and sugar until fluffy. Beat in eggs one at a time beating well after each addition. Add vanilla. Mix dry ingredients together and add to creamed mixture alternating with water. Beat well after each addition. Stir in sauerkraut. Pour batter into a greased and floured 13x9x2 pan. Bake in 350-degree oven 35-40 minutes. Cool in pan, then frost with favorite frosting.
